Ingredients
Wonton Filling:

500g lean chicken breast mince

15g chicken bouillon powder

2 spring onions, finely chopped
- ½ brown onion, finely chopped
- 2 tsp ginger, finely minced
- 5g salt

½ tsp pepper

4g sugar
-
1 tsp sesame oil

1 tbsp minced garlic

5ml fish sauce

250g wombok (Chinese cabbage), finely chopped and salted

60 white square wonton wrappers
- Optional: 100g cooked shiitake mushrooms or shrimp, finely chopped
Broth for Boiling:

1L water
-
2 tsp chicken stock powder or chicken bouillon powder
- 1 tsp sesame oil
Method:
1. Prepare the Wombok:
- Wash and finely chop the wombok. Sprinkle a pinch of salt on it and let it sit for 10 minutes to draw out excess moisture. Squeeze out the liquid and set aside.
2. Make the Filling

In a large bowl, combine the chicken mince, chicken bouillon powder, spring onions, brown onion, ginger, salt, pepper, sugar, sesame oil, minced garlic, fish sauce, and the prepared wombok. Mix thoroughly until well combined.
- If using, add the finely chopped cooked shiitake mushrooms or shrimp to the mixture.
3. Assemble the Wontons:

Place a wonton wrapper on a clean surface. Spoon about 1 teaspoon of the filling into the center.

Moisten the edges of the wrapper with water, fold into a triangle, and press to seal. Bring the two opposite corners together and seal with a dab of water to form the traditional wonton shape.
4. Prepare the Broth:
- In a large pot, bring 2L of water to a boil. Add the chicken stock powder and sesame oil.
5. Cook the Wontons:
- Gently add the wontons to the boiling broth in batches to avoid overcrowding. Cook for 5-6 minutes or until the wontons float and the filling is cooked through.
6. Serve
- Ladle the wontons and broth into bowls. Garnish with additional chopped spring onions if desired.
- Drizzle with soy sauce and chilli oil for an extra kick!
